When you work, it can be sometimes be hard to come up with a quick meal that you can throw together on your lunch hour. Sometimes I have leftovers from dinner the night before and then other times, there aren’t any leftovers or whatever is leftover will not fit into my macros with what I have planned for dinner. Have you ever had this problem?
I have a few go-to quick meals that I can throw together in a few minutes and eat without having to guzzle it down quickly.
- Turkey Lettuce Wrap – I take a couple of green leaf lettuce or romaine leaves and and use them as a wrap. Take a couple of slices of thin turkey (or whatever keto friendly sandwich meat you like) and place on a lettuce leaf. Top with a little mayonnaise and mustard, add a slice of your favorite cheese and a few sliced cherry tomatoes or a slice of tomato. Add some Himalayan pink salt and pepper if desired. Roll the lettuce into a wrap and enjoy!
- Salad – I always have salad fixings on hand. I will tear up some green leaf lettuce (my favorite) and put together a quick salad. Sometimes I will fry up a couple of pieces of bacon to go in it. I always throw in some sliced cherry tomatoes. Occasionally, I will have some cooked chicken in the refrigerator that I will include. For salad dressing I will use olive oil and Himalayan pink salt or some of my homemade ranch dressing.
- Bacon and Eggs – When in doubt, fry up some bacon and cook up a couple of eggs.
- Omelette – Make up a quick cheese omelette with some sautéed onion, mushrooms and peppers.
